Easy Avocado Tomato Onion Salad
📝 Ingredients
2 tablespoons extra virgin olive oil
¼ cup minced cilantro or parsley
¼ small red onion, thinly sliced
2 ripe avocados, diced
1–2 medium tomatoes, diced (or 1 cup cherry tomatoes, halved)
1 tablespoon fresh lime or lemon juice
Salt & black pepper, to taste
Optional additions:
1 small garlic clove, minced
½ jalapeño, finely chopped
½ teaspoon cumin
Crumbled feta cheese

1. Prepare the veggies
Dice the avocados.
Dice the tomatoes (or halve cherry tomatoes).
Thinly slice the red onion.
Mince cilantro or parsley.
2. Make the dressing
In a small bowl, whisk together:
olive oil
lime or lemon juice
salt & pepper
(Optional) garlic or cumin
3. Combine the salad
In a medium bowl, add:
diced avocados
tomatoes
red onion
cilantro/parsley
Pour the dressing over the top.
Gently toss to combine so the avocados don’t mash.
4. Serve
Serve immediately or chill for 10 minutes.
