Walking Taco Lasagna

Ingredients:

 

1 lb ground beef

 

1 packet taco seasoning

 

1 cup salsa

 

1 can (15 oz) black beans, drained & rinsed

 

1 can (15 oz) corn, drained

 

1 cup sour cream

 

2 cups shredded cheddar or Mexican-blend cheese

 

9–12 oven-ready lasagna noodles

 

Optional toppings: crushed tortilla chips, lettuce, tomatoes, jalapeños, green onions

 

Instructions:

 

Cook the beef

In a skillet over medium heat, brown the ground beef. Drain excess grease.

Stir in taco seasoning and salsa. Simmer 2–3 minutes.

 

Mix the filling

Add black beans and corn to the beef mixture. Stir well and remove from heat.

 

Assemble the lasagna

Preheat oven to 375°F (190°C).

Lightly grease a 9×13 baking dish.

 

Layer in this order:

 

Beef mixture

 

Lasagna noodles

 

Sour cream (spread gently)

 

Shredded cheese

 

Repeat layers until ingredients are used, finishing with cheese on top.

 

Bake

Cover tightly with foil and bake for 30 minutes.

Remove foil and bake 10–15 minutes more until bubbly and noodles are tender.

 

Rest & serve

Let sit 10 minutes before slicing.

Top with crushed tortilla chips and your favorite taco toppings.
