Baked Cheesy Potato Rounds

🛒 Ingredients (Serves 4)

4 medium potatoes (Yukon Gold or russet work best)

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 teaspoon dried thyme or oregano (optional)

1 1/2 cups shredded mozzarella or cheddar cheese

2 tablespoons grated Parmesan cheese

1 tablespoon fresh chopped parsley (optional, for garnish)

👩‍🍳 Step-by-Step Instructions

1️⃣ Preheat the Oven

Preheat oven to 400°F (200°C).

Line a large baking sheet with parchment paper or lightly grease it.

2️⃣ Prepare the Potatoes

Wash and scrub potatoes well.

Leave the skin on for extra crispiness and flavor.

Slice into even rounds about 1/4 inch (0.5 cm) thick.

(Try to keep slices uniform so they cook evenly.)

3️⃣ Season

Place slices in a large bowl.

Add olive oil, garlic powder, salt, pepper, and dried herbs.

Toss until every slice is evenly coated.

4️⃣ First Bake

Arrange potato slices in a single layer on the baking sheet.

Make sure they are not overlapping.

Bake for 20–25 minutes, flipping halfway through, until golden and fork-tender.

Remove from oven.
