2 tbsp olive oil

 

1 lb (450 g) boneless skinless chicken breasts (or thighs)

 

1 onion, chopped

 

2 cloves garlic, minced

 

3 medium carrots, sliced

 

3 cups chicken broth

 

1 cup heavy cream

 

1 cup whole milk

 

1 tsp dried thyme

 

1 tsp dried rosemary

 

Salt and pepper to taste
