French Dip Tortilla Roll-Ups

Ingredients

8 large flour tortillas

 

1 lb deli roast beef, thinly sliced

 

2 cups shredded provolone or mozzarella cheese

 

1 small onion, thinly sliced (optional, for extra flavor)

 

2 tablespoons butter (optional, for sautéing onions)

 

1 cup beef au jus, warm (for dipping)

 

1 teaspoon Dijon mustard or horseradish (optional, for extra zing)

Step 1: Prep the Ingredients

Lay out the flour tortillas on a clean surface.

 

If using onions, sauté them in butter over medium heat until soft and lightly caramelized. This adds sweetness and depth to the roll-ups.

 

Step 2: Layer the Fillings

Spread a thin layer of Dijon mustard or horseradish on each tortilla if desired.

 

Layer roast beef evenly over the tortillas, leaving about 1 inch from the edge.

 

Sprinkle shredded provolone or mozzarella cheese over the beef.

 

Add sautéed onions on top if using.

 

Pro Tip: Don’t overfill—rolling will be easier, and you’ll avoid cheese spilling out during baking.

 

Step 3: Roll the Tortillas

Carefully roll each tortilla tightly into a cylinder.

 

Place seam-side down on a parchment-lined baking sheet.

 

If desired, brush the tops lightly with melted butter for a golden finish.

 

Step 4: Bake Until Melty

Preheat oven to 375°F (190°C).

 

Bake roll-ups for 12–15 minutes, or until cheese is melted and tortillas are slightly golden.

 

Variation: For an extra crispy finish, broil for the last 1–2 minutes—just watch carefully to avoid burning.
